Been looking for a 12V LFP battery for my van build. I read about these on google and online sellers in forums and am considering buying four. I only have an 800W fridge, will these capacities allow me to have a good weekend?

Without more information, we cant tell.
Which specifig fridge do you have, what does it consume over the span of a day ore a week?

Also the batteries from your link, are priced 3 times as high, as what they are actually worth.

Also what temperature will the fridge be working in, hotter = more power used.
+1 that price is expensive.

280ah @ 12v is 3,360wh. At 80% discharge - that's 3360wh * .8 = 2688wh available from the battery. Assuming your fridge averages 100w/hour, then you can go 26.9hrs. A small fridge is probably more like 50w/hour on average but....

As @Overfail suggests - you can figure this out by measuring how much power the refrigerator uses over a day during various ambient temp scenarios by using a killowatt meter (if 120v style) like this - https://www.amazon.com/P3-P4400-Electricity-Usage-Monitor/dp/B00009MDBU/ref=sr_1_2

As @Redpacket suggests - the ambient temps will make a difference.
