They make 2 different models.  The 2 unit model does protection+balancing and the single unit (with display built in) only does protection but no balance.

Sure.   
- You set balancing option in the menu and balance is 'off' for STORAGE mode (no charge or discharge amps on the shunt) bu default.   Don't hookup the shunt and it will be in STORAGE mode all the time and then balance can be off all the time. 
- An external relay is required turn the load on/off (e.g. give protection) so don't hook up the relay
