Pouch Cells -- LiIon or LiPo?

Back to your use, i am not sure if Pouch cells are dedicated for very high loads.
I have had some in a charge test, i got them esily to blow up a little, which navished after days. (no bad sealing).
Specialist to the front !
 
At least they will have enough power for my flashlight idea. (If you compare 10 cells @ >250W power of the e-bike to 5 Cells @ 100W.)
 
The right pouch cells are especially suited for very high loads. However you never know what quality and spec was fitted here as high power wasn't needed in the first place. As with any used cells, test their behaviour for the given current you want to draw.
