Challenge to find a device to mimic split phase?

My local power company chargesa a $50 monthly fee for on-grid solar, so my ultimate goal is to go completely off. That means I'll be dusting off those EE books from university to understand it. And running 240v devices is essential in 115* (45*C) heat.

With a split-phase transformer you can go from single phase 230VAC to 2x115VAC for instance. Many people use that for splitting it up.
There is of course several ways to build it yourself but...
